Butterscotch brownies, the recipe
It turns out that the updated version of the Joy of Cooking does not include the recipe for butterscotch brownies. It's shocking, I tell you, and just plain not right. So by request, here is the recipe, with my additions:
1/4 c butter (yes, butter--not margerine)
1 c brown sugar
1 egg (yes, eggs--not substitutes)
1 tsp vanilla
1/2 c - 3/4 c flour
1 tsp baking powder
1/2 tsp salt
1/2 c - 1 cup chopped nuts and/or coconut
Melt butter in a saucepan. Stir sugar in until dissolved. Cool slightly, then beat in egg, vanilla, flour, baking powder, and salt. Then stir in nuts and/or coconut.
Pour into a greased 9x9-inch pan and bake at 350 degrees for 20-25 min., or til a knife comes out clean.
