King Arthur Flour has some great recipes. One of my favorites is Emma's Pumpkin Bread. Although, I alter the receipe - adding in orange extract, and chocolate chips for an orange/pumpkin/chocolate taste.
The basic recipe is one of the best I've found so far for pumpkin bread.
