Some days are just made for apple pie. I went to a new-to-me farmer's market on Sunday, and seemingly every other stand had quite the selection of non-toxic/organic/happy apples. How could one resist? I bought a combination of Mutsu, Empire, and Granny Smiths. Their flavors and textures blended together well, and it wasn't long before the pie, and the vanilla Haagen-Dazs, was demolished.

The crust on this pie looks just perfect! Sometimes I don't think there's anything better than nicely done piecrust.
