Carrot cake, the good one
Some people dream of trips to Fiji, and I was dreaming about a carrot cake. Though actually a carrot cake in Fiji would be even better. I pulled out my mom's recipe the other day--one I'd carefully rewritten on a 3x5 card for her years ago, with a note under the title saying it was "the good one"--versus all the others, I suppose. It's good to be specific. I made two nine-inch layers, splitting each layer and filling them with apricot preserves. The whole cake as well as between the two layers was covered in cream cheese frosting--a must for any self-respecting carrot cake.
