Marshmallows

S'mores anyone? Here I have lots and lots of fluffy cubes of sugar, dusted with more sugar. I still can't believe that some stores charge $10-$15+ per box of "homemade" marshmallows. Marshmallows are surprisingly easy to make--there's just six ingredients (sugar, corn syrup, gelatin, salt, vanilla, and confectioner's sugar), but they are messy and they do have to sit overnight. They're definitely worth it, though, and now I have fresh marshmallows for cocoa this morning ... yum!

I followed the basic marshmallow part, and then instead of using coconut, I covered the pan with sifted confectioner's sugar, and then sprinkled (heavily) more on top. Then you let it sit out overnight. When you start slicing, have a bowl of sifted conf. sugar on hand so you can dust the sides of each marshmallow.
