The Wonderful World of Chocolate Ganache

Today I took a class all about chocolate ganache at La Cuisine. We tasted about 15 different kinds of chocolate, whipped up ganache for toppings and mousse, and poured rich, liquidy ganache into chocolate tart shells. The class lasted all day, and it was fabulous. I came home with a box full of chocolate treats that hopefully someone(s) will help me test tonight. Chocolate tart, filled with chocolate ganache steeped with orange zest and a thin glaze of orange marmalade on the bottom, topped with a little gold leaf Fudge cake with caramel-flavored chocolate ganache on top Mini gingerbread-chocolate cupcakes topped with whipped ganache, with a few truffles on the side Truffles rolled in two different cocoa powders. Umm, I liked it all! I really liked the caramel-flavored ganache/mousse on top of the fudge cake (which was also good).
