Comfort Me With ... Upside Down Apple-Ginger Cake and Chicken Soup

Comfort has been the theme of the past week. Tonight I made chicken soup using the roast chicken we had last night, adding lots of fresh (and local!) ginger and garlic from Next Step Produce, along with carrots, onions, peppers, and green beans. For dessert, we had an upside down apple cake, based on a recipe from Cook's Illustrated, but boosted with lots of freshly grated ginger. Just a slice ... Isn't this ginger beautiful with its pink-to-green stems? Love the colors--and the flavor! Chicken soup, served on top of creamy mashed potatoes

I didn't know there was fresh ginger around here! I bet that's good. Nice need to live next door to me so I can invite myself over. :)
