Cannoli Cupcakes

The best part of a cannoli is the filling. The fried shell makes a crunchy contrast--but it's the creamy ricotta mixture inside that interests me. These cupcakes are essentially a vehicle for the ricotta frosting, which is loaded with slivered bittersweet chocolate and chopped up salted pistachios. I should consider myself lucky that not everyone emails me delicious-sounding recipes like King Arthur Flour does--I'd never leave the kitchen, lol.

Consider it done! I think for future batches I'll use a different cupcake recipe--one I'm sure your boys will like (with regular frosting, of course.)
