Happy New Year!

Tonight marks the beginning of Rosh Hoshanah, and the meal typically is filled with sweet things to herald a good year. We had creamy noodle kugel, using a new and now favorite recipe, carrots, and a spinach salad with apples, red peppers, toasted pecans, and pomegranate seeds. The kugel is very rich but light, and for what it's worth I used reduced fat (but not no fat -- ugh) sour cream and cottage cheese. Also, I omitted the raisins and put corn flakes on top for crunch. For dessert, I made an apple cake--a simple recipe but very good and very apple-y. I used 1 c butter instead of 1.5 c oil, added freshly grated ginger as well as cloves and allspice, and skipped the raisins. Just a slice ...
