Lemony Layer Cake


I've been wanting to make this cake for a long time, but somehow other cakes kept jumping the line. The opportunity finally presented itself, though, and I'm very happy I made it. As is my usual way, I didn't follow one particular recipe but combined parts of ones I liked, with a few twists. The two cake layers are filled with a tart, tangy lemon curd, which I also folded into the frosting.

Carrot Cake Birthday




Happy birthday to my sister! For her cake I made a simple but delicious carrot cake. I skipped the pineapple that some people seem to love, but flavored the cake with lots of cinnamon, ginger, and finely chopped pecans. And I covered it with cream cheese frosting, of course.

Happy Birthday to my sister!

I made a seven-layer cake for my sister's birthday this year, alternating layers of sponge cake, mocha buttercream, crispy hazelnut meringue, and coffee buttercream. This is a variation on a 12-layer cake, but I skipped the chocolate souffle layers (and the accompanying buttercream layers) as it just seemed like too much. The cake overall has many parts, but none of them are very difficult. The sponge cake mixes up and bakes in about 15 min. The meringue is easy to make, but it does require more time for low and slow baking--in this case about twice as long as the recommended time. Despite the fact that we had perfect meringue weather today, the layers stayed chewy for ages. I left them to cool in the oven when I ran some errands, and by the time I came back, they had crisped up. I boosted the flavor of the coffee buttercream with Columbian coffee essence, as I wanted a fairly strong coffee presence. Some of that buttercream was then set aside and mixed with melted bittersweet chocolate to make the mocha buttercream. I used melted bittersweet Ghirardelli chips, which I always have on hand. Because I wasn't making all the layers, I only made half the buttercream recipe, which worked out perfectly. If I'd wanted to pipe anything, though, I'd have wanted more to work with. Apricot-almond coffee cake for breakfast ... a very cakey day! Now to use the Wii fit she received as a present ...

Vacation Food

(go on, click ... you know you want to) I think seafood is obligatory in New England, if'n you're not a vegetarian, that is. And I'm not. I just returned from a few days in Maine, where we had some of the best lobsta rolls evah. Go to Tubby's, avail yourself of New England's Best Ice Cream, and pick up a large, made-on-the-spot lobster roll that contains no added nothing, just the way it should be. It was so good we had to have another one the next night. Having more time and inclination, we had a little more to go with our dinner that night: lobster rolls, tomatoes with fresh feta, and local green beans. One night I even cooked: shrimp and huge sea scallops with fresh tomatoes, onions, and a little smoked mozzarella, with local green beans on the side. Theme and variation yes, but so good. Happy Birthday to my mom! A belated celebration with lots of yummy cupcakes and fresh raspberries. We ended up quartering them so we could all taste all of them. A quiet celebration on the actual night, with just the two of us but three of Tubby's fabulous flavors: peanut butter (which we both loved), coffee chip, and the requisite black raspberry.

Lemon Layer Cake


Happy birthday to my favorite (and only) sister! The cake is lemon ... the filling is lemon curd ... and the icing was described as tasting like lemon sorbet--light and tangy and sweet. Just not as cold. I mixed up a regular recipe of the cake batter, but I put it in two 6x2-inch pans. I made one small cake for today, and now have a second one all ready to go in the freezer.

Orange Chiffon Cake


Happy Birthday and lots of love to my dad, who would have been 77 today. Orange chiffon was his favorite kind of cake--and really, what's not to like? This recipe is from Fanny Farmer, and I added a light orange juice-confectioner's sugar glaze.

and brownie bits -- yes, lots and lots of chocolate!

Triflait


In a guest creation today, I present the "triflait," a combination trifle-parfait designed by my niece and put together by my sister. The bottom is a layer of chocolate cake crumbs, followed by a layer of cookie dough ice cream, then more cake crumbs, chocolate-chip ice cream, fresh strawberries, and topped with whipped cream. To match the slightly tropical theme of the party, there were paper umbrellas, plastic mermaids, mini lifesaver candies, fish-shaped sprinkles, and gummy flip-flops.
