Cloudy with a Chance of ...


Still in the cold-weather comfort food mode, I made meatballs the other day. First I mixed up some beef meatballs, and then I made a tofu version for the vegetarians. Both versions were cooked in a tomato-basil sauce and served over linguine. Leftovers were used on pizza last night, and there are still a few for sandwiches, too.

And now the tofu version


Mmm, pizza. There was also a margherita version and one with Alfredo sauce.

Grilled Chicken Vindaloo and Naan

Tonight's meal was going to be lasagna, but somehow it evolved to this tasty Indian feast. We had grilled chicken vindaloo, grilled tofu vindaloo, fresh naan, grilled summer squash and zucchini, asparagus, and basmati rice. There were also homemade mango chutney and raita.
Mango Chutney 2 Champagne or Ataulfo mangoes, peeled, cored, and diced (they don't have to be perfectly ripe) 1/2 c chopped onion 1 tsp minced jalapeno (or more, to taste) 3 Tbs fresh lime juice 3 Tbs each finely chopped fresh mint and cilantro 1-2 tsp freshly grated or ground ginger 2 tsp brown sugar 1 tsp cumin, quickly toasted in a pan salt In a saute pan, combine all the ingredients and bring to a boil. Turn down the heat and let just barely simmer til the mixture has thickened slightly. Taste, and adjust the seasonings. You might want to double this, because it will be eaten--and quickly. Mother's Day

To all the mothers out there--and most especially my mom-- I want to wish you a very happy Mother's Day! This year I made dinner for my mom, taking advantage of the best of spring flavors. We had spice-rubbed grilled chicken, cornmeal-crusted tofu, asparagus, tomato salad with arugula, and rosemary roasted potatoes.
For dessert, we had a tart and creamy key lime pie, along with juicy strawberries dipped in sour cream and brown sugar (one of my mom's--and my--favorites.)
Kt's Key Lime Pie
1 graham cracker pie crust (9-10 crushed graham crackers, melted butter, sugar)
14 oz sweetened condensed milk
1/2-3/4 c fresh lime juice, depending on how tart you like it
zest of 1-2 limes
4 egg yolks
3/4 c heavy whipping cream
2 Tbs sugar
1-2 tsp vanilla
lime zest
chocolate shavings
Preheat the oven to 350 degrees.
In a bowl, mix together the sweetened condensed milk, lime juice and zest, and egg yolks until smooth. Pour into the graham cracker crust -- it won't reach all the way to the top.
Bake for 20-25 min., til only the very middle jiggles slightly. Let cool for 15 min., and then chill for at least an hour. Then beat together the whipping cream, sugar, and vanilla til fairly stiff and spread evenly on top of the chilled pie. Top with additional lime zest and chocolate shavings.
