Grilled Corn Cakes


These corn cakes made an easy and different weekend lunch. Usually lunch is a pickup affair, often leftovers or just a sandwich. For this recipe we used frozen corn, which is actually what was called for in the recipe, but I bet it's even better with fresh corn. The corn is put into the food processor to break it up a bit, and then it's mixed with smoked mozzarella, breadcrumbs, sour cream, chives, and other seasonings. After being shaped into burgers, they're chilled for thirty minutes, rolled in breadcrumbs and then grilled til golden brown and the cheese is melted.
