Christmas Cookies, Day 1

The holiday baking has begun. The list of what I want to bake is much longer than reality permits, but even with trying to cut back, I'm still planning to make seven or eight kinds of cookies and treats. Yesterday, I made chocolate-dipped espresso shortbread, peanut butter balls, double-ginger cookies, and chocolate candy cane bars. Chocolate-dipped espresso shortbread, from Fine Cooking's cookie issue. Peanut butter balls, a sweet mixture of peanut butter and confectioner's sugar, rolled in bittersweet chocolate and then tossed in finely chopped salted peanuts, from a recipe in Carole Walters' Great Cookies. Double-ginger cookies, a combination of crystallized and powdered ginger, from a recipe in Fine Cooking's cookie issue Chocolate candy cane bars, based on a recipe from the mysteries of Joanna Fluke
